In the picturesque municipality of Binissalem, Forn Nou stands out for its impressive historical legacy, with records confirming its opening in 1729. The establishment’s name comes from the old access located on Carreró Nou, and the local saying “it’s older than Forn Nou” highlights its longevity and deep roots in the community.
The recent history of Forn Nou began in 1918 when Bernat Carbonell Mora acquired the business, initiating a family tradition that continues today under the direction of Jaume Reus Adrover, the fourth generation at the helm. Although the establishment underwent changes in the early decades of the 20th century, when the alley was widened and the facade renovated, it has preserved its essence inside. Likewise, the facade facing Carrer Concepció was renovated when this main street, which runs from Plaça de sa Quartera to Plaça de l’Església, was widened. The street widening took place in 1948.
Notwithstanding these reforms, the wood-fired oven, boasting over fifty years of history, remains the heart of the workshop, albeit adapted to operate with gas oil. More recently, the interior has undergone a thoughtful renovation to incorporate a seating area, allowing patrons to savor freshly prepared products directly within the very place they are crafted.
Forn Nou is affiliated with the brand «Pa d’Aquí. Forn i Tradició», which certifies its commitment to the traditional production of bread and pastries. Specializing in bread, ensaimadas, panades, and other traditional Mallorcan pastries, this emblematic bakery continues to be a pillar in preserving Mallorca’s authentic flavor.
